Why does a green plant appear green when viewed under white light?
I know colors change when you mix light, but why does a green plant still appear green under white light? Is it because it reflects green?
You are correct! White light contains the full spectrum of visible lights. Different colors are waves of light with different wavelengths, from abt 390nm for violet light to 750nm for red light. Leaves absorb light of pretty much every color except for the green area, which gets reflected to your eye.
Chlorophyll are the organelles in plants that convert the energy from sunlight (all the colors except green) and convert it into usable energy for the plant.

What do colorblind people see when viewing white light?
Since white light is a mixture of all the colors of the visible spectrum, how would partially colorblind people (say ones who can't see blue or green) view white light?
Colourblind people see white light the same. (Yeah, there's no way of knowing if anybody's perception of one colour is the same as anybody else's perception of the same colour, but still....)
And here's why: the eye doesn't actually care what wavelength things are.
I've got three types of cones (colour-specific light-sensitive cells) in my retina. If you aren't colourblind, you do too. If you have some form of colour vision anomaly, be it full or partial, you have two (or, in rare cases called achromatopsia, only one). The only difference between these three or fewer types of cones is the wavelength that they're the most sensitive to. So a green cone is most sensitive to a green light. But a white one, or a blue one, or a red one can still set it off too, it just has to be a little brighter. Ditto for the blue and red cones. And once a cone 'reacts' to light, all the brain knows is that something was seen. It sort of assumes that the red cone saw red or the blue one saw blue, but that's not necessarily the case.
Anyway, so if you shine a white light (all the wavelengths -- which most lightbulbs aren't, by the way) at the eye, all the cones are going to be stimulated. Regardless of which types they are, they're all going to fire off a signal to the brain, and that happens the same way in colourblind people as it does in colour normals. So when all the cones are firing, the brain knows "oh, that's white". (Or gray, or something along those lines...) Assuming our brains perceive that in the same way, white is white, regardless of colour vision.
And that's why we say people are, for instance, red-green colourblind: they confuse red and green with each other, but the other colours look the same as they would to us.
